How do you get a food stand at one of the weekend events like trade shows, art festivals, or food festivals?

I have always wonder how people get the food stands at festivals or special events places. What's all involve, cost, permits, etc.? Anyone has experience in this area, please advise. Thank you so much in advance.

1. I have not really done this, but, you contact the State, County or City, whichever sponsor the activity and get a permit. You may pay, but, then you can play.
